The History of Recipes
Transcribed cooking instructions as an idea can be tracked far back into history, at least as far back as the Egypt of the Pharoahs, and maybe further still. Interesting though that is, sadly, these early cookbooks were just basic hieroglyphic or cunieform recipes for preparing meals.
As we move into The time of the roman empire around 25BC a roman called Apicius wrote a number of scripts detailing recipes cooked by wealthy Romans. In his works, he recounts how the meals were split into appetizers, main meal and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also recounts how the ancient cooks used many different aromatic flavors, including a few you will know for example bay, fennel and dill. Over the following few centuries, the powerful and rich houses competed to serve up the most extravagent banquests, and consequentially the best cooks and their recipe collections increased in prestige. However, it was during the 19th century that formal cookery and recipe publications rose to prominence. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to assembling, trying out, and writing down recipes common in their social group. The arrival of TV gave us TV cookery programs and the demand for the spin-off recipe books. Which pretty much brings us to the present day and the internet revolution, allowing us all to access thousands of recipes like those on sites such as the one you are reading now. |
