Ingredients
1 tbsp oil
3 lb pork, cut in 1-in. cubes
1 large onion, chopped
1 red bell pepper, diced
1 green bell pepper, diced
2 cl garlic, minced
1 fresh jalapeno pepper, mince
1/2 tsp oregano
1/2 tsp cumin
1 tbsp cider vinegar
1 1/2 tsp salt
2 can green chilies, chopped (4 oz
Directions
* or 3 canned jalapeno peppers.
Brown pork in oil. Add rest of ingredients EXCEPT GREEN CHILIES and
cook for 1 to 1 1/2 hours. Add green chilies before serving.

The History of Recipes
It is quite possible to prove the history of recipes way back into antiquity, in truth as far back into history as the Egypt of the Pharoahs, and possibly even further. Interesting though that maybe, in the main part, these ancient cookbooks were just very basic hieroglyphic instructions for food preparation.
The truth of the matter is, the most ancient recipe discovered, according to experts in ancient history is a collection of tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel blissful and exhilarated. As we move on, there are two interesting cookery books which date from the 1300s - a book entitled `Forme of Cury`, and another, similary called `Curye on Inglish`. Although the titles sound familiar, they are unconnected to the spicy food that appears on menues today, but instead accounts of the types of meals on the menues of the rich and wealthy people of the time. During the next few centuries, the wealthy families of the West tried to lay on the most exotic banquets, and consequentially chefs and their recipes could command a high salary. Even so, it was during the nineteenth century the formal cooking and recipe publications became popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated years of their lives to collating, trying out, and publishing the recipes that were being prepared for the better households. By the advent of the 20th century, cooking books were increasing in popularity mostly due to better eduction, increased leisure time and a general increase in wealth. |
