The History of Recipes
Written cooking instructions as an idea can be tracked way back into the far past, certainly as far back into history as the Egypt of the Pharoahs, and possibly even further. In practice though, mostly, these early cookbooks were just primitive hieroglyphic or cunieform instructions for preparing meals.
Later on, in The time of the romans 25BC a roman called Apicius assembled a collection of scripts detailing recipes enjoyed by wealthy roman citizens. In his scrolls, Apicius tells us how the meals of wealthy Romans were split into hors d`oeuvre, entrees and afters, a very modern way of dining. Aspicius also describes how the Roman cooks were skilled in the use of many spices and herbs, including a few you will know like bay, mint and parsley. Later on, in the 15th century, knights returning from the crusades brought back a variety of foods and spices from Arab countries, such as basil and coriander. The introduction of these new tastes prompted a surge in manuscripts on cooking, the majority of which are now in private libraries. When we get to the 20th century, cooking books are highly popular as a result of more people being able to read, more free time and being a little richer. |
