The History of Recipes
We are able to read the history of written recipes back into antiquity, in fact as far as the early Egyptians, and possibly even further. Interesting though that is, mostly, these ancient cook books were just very simple pictorial recipes for meal preparation.
Fascinatingly, the oldest recipe found, according to historians are some clay tablets in ancient Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `blissful`. Progressing into The time of the roman empire around 25BC a Roman scholar, called Apicius, assembled some scrolls describing recipes enjoyed by wealthy roman citizens. He recounts how the meals of wealthy Romans were separated into hors d`oeuvre, main course and dessert, a very modern way of dining. Additionally, he recounts how the Roman chefs made use of many different herbs, including many that are still in use today such as bay, mint and asafoetida. In the 15th century, knights returning from the crusades brought us many foods, spices and herbs from the East, such as basil and rosemary. These new foods and tastes prompted an increase in publications on food, most of which are now in private cookery archives. Over the following few centuries, the wealthy families of Europe competed with each other to serve up the best banquets, and as a result cooks and their collection of recipes were greatly in demand. However, it wasn`t until the nineteenth century that formal cookery and recipe books became popular. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, dedicated years of their lives to assembling, verifying, and recording the recipes that were being prepared for the better households. By the arrival of the twentieth century, recipe publications are in high demand, due to increased literacy, more free time and having more money. The introduction of television brought us cooking programs and the spin-off recipe books. Which brings us neatly to the present day and the internet revolution, allowing us all to search through thousands of recipes like those on this web site. |
