Pork Chops W/Apples & Sweet & Sour Recipe


Ingredients

8 1/2 in thick boneless pork
1 chops
2 cooking apples (granny
1 smiths), about 1 lb.
1/4 cup flour
2 tbsp oil
2 tbsp finely chopped shallots (or
1 onions)
2 tbsp red wine vinegar
3/4 cup chicken broth
1 tbsp honey
1 tsp tomato paste (just to give
1 red color, sometimes i
1 substitute
1 tbsp catsup)
1 salt and pepper to taste

Times Pork Chops with Apples and Sweet and Sour Sauce

Sprinkle chops with salt and pepper to taste and set aside. Cut the
Apples into quarters. Peel the quarters and discard the core. Dredge
the chops in flour. Heat the oil in a large heavy skillet, and add
the chops. Cook until well browned on one side, about 5 minutes. Turn
the chops and continue cooking about 5 minutes. Remove the chops, and
add the quartered apples. Cook about 2 minutes turning the apples
often. Remove the apples and pour off the fat from the skillet. Add
the shallots and vinegar and cook briefly, stirring with a wooden
spoon. Add the broth and honey. Cook 1 minute and stir in the tomato
paste. Return the chops and apples to the skillet. Spoon sauce over
them, and cover closely. Cook ten minutes, and serve chops covered
with sauce.

The History of Recipes

We can follow the history of written recipes back into history, certainly as far as ancient Egypt, and maybe even further. Interesting though that maybe, in the main part, these early recipes were just very simple pictorial, hieroglyphic or cunieform recipes for preparing meals.

Although the titles sound familiar, these books are not about the indian food that is served today, but instead accounts of the types of meals prepared by the chefs of the nobility of that period.

Later on in the 1400s, the Crusaders brought back a variety of spices and herbs from the Middle-East, including spices such as coriander, basil and rosemary. These new spices and herbs created an increase in recipe manuscripts, some of which are kept safe in private cookery archives.

For the centuries that followed, the wealthy families of the West competed to lay on the most exotic meals, and as a result chefs and their recipes were highly sought after. Even so, it wasn`t until the nineteenth century that fine cookery and recipe publications reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, devoted their lives to assembling, trying out, and publishing recipes to allow everyone to enjoy them.

By the time we get to the 20th century, cooking books were highly popular mostly due to increased literacy, increased leisure time and being a little richer.

The arrival of television brought us TV cooks and the recipe books that accompanied them.

Which brings us neatly to the present day and the internet revolution, allowing us all to access thousands of recipes just like those on sites such as this.
