2 tbsp oil
2 tbsp finely chopped shallots (or

2 tbsp red wine vinegar
3/4 cup chicken broth
1 tbsp honey
1 tsp tomato paste (just to give
1 red color, sometimes i

1 tbsp catsup)
1 salt and pepper to taste

Times Pork Chops with Apples and Sweet and Sour Sauce
Sprinkle chops with salt and pepper to taste and set aside. Cut the
Apples into quarters. Peel the quarters and discard the core. Dredge
the chops in flour. Heat the oil in a large heavy skillet, and add
the chops. Cook until well browned on one side, about 5 minutes. Turn
the chops and continue cooking about 5 minutes. Remove the chops, and
add the quartered apples. Cook about 2 minutes turning the apples
often. Remove the apples and pour off the fat from the skillet. Add
the shallots and vinegar and cook briefly, stirring with a wooden
spoon. Add the broth and honey. Cook 1 minute and stir in the tomato
paste. Return the chops and apples to the skillet. Spoon sauce over
them, and cover closely. Cook ten minutes, and serve chops covered
with sauce.

The History of Recipes
It is actually possible to trace the history of recipes way back into the distant past, certainly as far as the ancient Egyptians, and potentially, even further back. In practice though, sadly, these ancient recipes were just primitive hieroglyphic instructions for meal preparation.
In an interesting twist, the most ancient recipe discovered so far, according to academics is a series of clay tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `exhilarated, wonderful and blissful`. During the time of the Romans a man called Apicius compiled a collection of scripts which described recipes enjoyed by his fellow Romans. In his scrolls, he describes how the meals were separated into appetizers, main course and desserts, a style of dining still practiced today. He also recounts how the early Romans made use of a wide range of spices, including a few that will be familiar to modern cooks like basil, rue and dill. Over the next few hundred years, the wealthy families of the West tried to serve up the best banquets, and because of this cooks and their recipes were much in demand. However, it was during the nineteenth century that cookery and recipe collections became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, dedicated the best years of their lives to assembling, testing, and publishing recipes to allow everyone to enjoy them. When we get to the 20th century, cooking books were increasing in popularity due to higher levels of literacy, people having more free time and having more disposable income. The arrival of TV brought us celebrity chefs and the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, permitting everybody to search through massive numbers of recipes just like those on this recipe site. |
