Ingredients
2 tbsp olive oil
4 pork chops,loin,1/2 thick
1 freshly ground pepper
1/4 cup chopped onion
3 tbsp apple juice concentrate,froz
3 tbsp brown sugar
1 cup cranberries
1 apple,small,tart
1/8 tsp ground cinnamon
1/16 tsp cloves,ground
1 dash nutmeg,grated
Directions
1. Sprinkle pork chops with pepper. Heat oil in large skillet and cook
chops over medium heat until lightly browned on both sides, about 6
minutes. Reduce heat, add chopped onion to pan and continue cooking 8
to 10 minutes.
2. Meanwhile, in a separate pan combine the apple juice concentrate,
brown sugar, washed cranberries, the chopped apple, cinnamon, cloves
and nutmeg. Cook over medium low heat until cranberries burst and
sauce thickens slightly, about 4 minutes.
3. Remove accumulated fat from chops. Pour sauce over meat and stir
into onions in pan. Cover and cook over low heat until chops are
done, 5 to 8 minutes. Serve immediately with rice or boiled potatoes.

Progressing into The time of the roman empire around 25BC a man called Apicius assembled some documents showing how to cook the recipes enjoyed by wealthy Romans. In his publication, he recounts how the meals of wealthy Romans were split into hors d`oeuvre, main meal and afters, something we still use today. Additionally, he tells us how the cooks of his times used a good variety of spices and herbs, including some that we all recognise such as basil, mint and dill. Over the following few centuries, the powerful families of Europe strove to serve the most exotic meals, and as a consequence, the best chefs and their collection of recipes were highly sought after. Nevertheless, it wasn`t until the 19th century that cooking and recipe books reached a high level of popularity. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted their lives to collecting, testing, and writing down popular recipes of the day. The introduction of television brought us TV chefs and the recipe books that accompanied them. Which pretty much brings us up to date and the invention of computers and the internet, allowing everyone to access thousands of recipes such as those found on this site. |
