The History of Recipes

Written cooking instructions as an idea can be tracked way back into distant history, certainly as far back into history as early Egypt, and maybe further still. Having said that, generally, these old cookbooks were just basic pictorial instructions for preparing meals.

In an interesting twist, the oldest recipe discovered so far, according to experts is a collection of clay tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making drinkers feel `blissful`.

Continuing our culinary historical journey, there were a couple of recipe books which were published in the 14th Century : a recipe book entitled `Forme of Cury`, and another named `Curye on Inglish`. Perhaps surprisingly, these books have no connection with the indian curry that is served today, but instead descriptions of the types of food cooked for the rich and wealthy people of that period.

Later on, in the 15th century, knights returning from the crusades brought back a variety of foods and herbs from middle-east cuisine, including parsley, basil and rosemary. These new foods and spices caused an outbreak in books on cookery, the majority of which are kept safe in academic collections.

Over the succeeding few centuries, the upper-class families of the West competed to serve the most extravagent meals, and because of this the best cooks and their collection of recipes became highly prized. Nevertheless, it wasn`t until the 1800s that fine cooking and cookery books reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the USA, devoted much of their lives to assembling, trying out, and writing down popular recipes of the day.

When we get to the 20th century, cookery publications were highly popular mostly as a result of higher levels of literacy, more leisure time and disposable income.

The TV revolution brings us TV cooks and the demand for the accompanying recipe books.

And that brings us to the present day and the internet revolution, permitting everybody to access massive numbers of recipes just like those on sites such as this.
