Ingredients
1 tsp salt
1 tsp ground ginger
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
1/8 tsp pepper
4 to 5 lb. center pork loin roast
1/4 cup honey
1/2 cup ; water
1 tbsp lemon juice
1/4 tsp ground ginger
1/4 tsp ground nutmeg
1/4 tsp ground cinnamon
2 medium cooking apples, peeled - cored and sliced
Directions
Combine first 5 ingredients; rub on roast. Place roast, fat side up,
on a rack in a roasting pan. Insert meat thermometer into thickest
part of roast, making sure it does not touch fat or bone. Bake at 325
F. for 30 minutes, or until thermometer registers
170 F.
Combine honey and next 5 ingredients in a saucepan; stir well. Bring
to a boil. Add apples; cover and simmer 8 minutes or until tender,
stirring occasionally. Transfer roast to a platter; spoon apple
mixture over roast.
Yield: 10 to 12 servings.

The History of Recipes
It is possible to trace the history of written recipes way back into distant history, certainly as far as early Egypt, and quite possibly further than that. However, generally, these ancient records were just very basic pictorial instructions for meal preparation.
Later on, in The time of the roman empire around 25BC a roman called Apicius assembled a few documents detailing recipes prepared by wealthy roman citizens. In his publication, he recounts how the meals were divided into starters, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius tells us how the ancient Romans were skilled in the use of a wide range of herbs, including a few you will know for example bay, mint and asafoetida. Later, in the fifteenth century, knights returning from the crusades brought back a variety of foods and herbs from Arab countries, including coriander, basil and rosemary. These new foods and spices was responsible for a torrent in recipe manuscripts, the majority of which still exist in private cookery archives. The arrival of television brings us TV cooks and the recipe books that accompanied them. And that pretty much brings us to the present day and the invention of computers and the internet, permitting everyone to access massive numbers of recipes just like those on this web site. |
