Ingredients
2 lb pork tenderloin
1/4 cup vegetable oil
2 cloves garlic, ea cut in 1/2
1/4 cup carrot, chopped
1/4 cup celery, chopped
1/4 cup lime juice
1/4 cup tequila
1 tbsp red chiles, ground
1 tsp salt
1 tsp oregano leaves, dried
1 tsp thyme leaves, dried
1/4 tsp pepper
4 cup tomatoes, chopped
1/4 cup onion, chopped
1 bay leaf
1/4 cup parsley, snipped
Directions
Spread mustard over the pork tenderloin. Heat oil and garlic in a 10"
skillet until hot. Cook pork in oil over medium heat until brown.
Remove garlic. Stir in remaining ingredients except the parsley. Heat
to boiling then reduce the heat. Cover and simmer until pork is done,
about 30 minutes. Remove the bay leaf and sprinkle with the parsley.
Serve.

The History of Recipes
We are able to trace the history of written recipes far back into the far past, in truth as far back into recorded history as the Egyptians, and maybe even further. Interesting though that maybe, mostly, these old cookbooks were just primitive hieroglyphic or cunieform instructions for preparing food.

As we move on, we find two interesting cookery books from the 1300s - one book entitled `Forme of Cury`, and another, similary called `Curye on Inglish`. Although the titles sound familiar, they are nothing to do with the curry that is familiar to us all today, but rather accounts of the types of meals prepared by the chefs of the rich people of that time. During the next few centuries, the powerful and rich tried to lay on the best banquets, and as a consequence, chefs and their recipes were greatly in demand. Even so, it was during the 1800s that formal cookery and recipe books became really popular. The Famous Mrs Isabella Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated years of their lives to assembling, verifying, and publishing recipes to help cooks of their time. By the advent of the 20th century, cookbooks are increasing in popularity due to more people being able to read, increased leisure time and having more money. |
