Ingredients
2 lb pork tenderloin
1/4 cup vegetable oil
2 cloves garlic, ea cut in 1/2
1/4 cup carrot, chopped
1/4 cup celery, chopped
1/4 cup lime juice
1/4 cup tequila
1 tbsp red chiles, ground
1 tsp salt
1 tsp oregano leaves, dried
1 tsp thyme leaves, dried
1/4 tsp pepper
4 cup tomatoes, chopped
1/4 cup onion, chopped
1 bay leaf
1/4 cup parsley, snipped
Directions
Spread mustard over the pork tenderloin. Heat oil and garlic in a 10"
skillet until hot. Cook pork in oil over medium heat until brown.
Remove garlic. Stir in remaining ingredients except the parsley. Heat
to boiling then reduce the heat. Cover and simmer until pork is done,
about 30 minutes. Remove the bay leaf and sprinkle with the parsley.
Serve.

The History of Recipes
Written cooking instructions as an idea can be tracked way back into distant history, in truth as far as the early Egyptians, and quite possibly further than that. Interesting though that maybe, in the main part, these early records were just basic hieroglyphic instructions for food preparation.
In an interesting twist, the most ancient recipe found, according to experts is a collection of tablets in the Sumerian language which describe the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel blissful and exhilarated. Later on, in The time of the romans 25BC a roman called Apicius assembled a few documents which described recipes prepared by the Romans. In his scrolls, Apicius describes how the roman meals were separated into starters, main meal and dessert, a style of dining still practiced today. Aspicius also tells us how the Romans used many different aromatic flavors, including a few that will be familiar to modern chefs like basil, rue and asafoetida. Over the succeeding few centuries, the upper-class families of Wesstern Europe tried to lay on the most exotic banquets, and as a result the best chefs and their recipe collections were highly sought after. Even so, it was during the 19th century that fine cookery and recipe collections really came of age. Mrs Isabella Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated their lives to assembling, trying out, and publishing recipes that were common in the better off homes of the day. The TV revolution brings us celebrity chefs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, permitting everybody to search through thousands of recipes like those on sites such as this. |
