The History of Recipes
Written recipes as an idea can be found way back into the far past, at least as far back into recorded history as the early Egyptians, and maybe even further. Interesting though that maybe, mostly, these ancient recipes were just simple hieroglyphic or cunieform instructions for preparing meals.
During the time of the Romans a roman called Apicius assembled a collection of scripts describing recipes prepared by his fellow Romans. He recounts how the meals were split into hors d`oeuvres, main meal and dessert, a very modern way of dining. Additionally, he recounts how the ancient cooks were skilled in the use of many different herbs and spices, including a few that are still present in modern kitchens such as basil, rue and asafoetida. Over the next few hundred years, the upper-class families of Wesstern Europe competed with each other to serve up the most exotic banquets, and as a result chefs and their recipes were at a premium. Even so, it wasn`t until the 19th century that fine cookery and recipe books rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Farmer in the USA, spent years to collating, verifying, and recording popular recipes of the day. When we get to the 20th century, cooking books are in great demand, due to increased literacy, leisure time and having more money to spend. |
