Ingredients
1 1/2 lb tenderloin of pork
1 salt and pepper to taste
1 garlic powder
ORANGE/LEMON GLAZE
1/2 cup orange juice
2 tsp lemon juice
1/4 cup port wine
1/2 cup orange marmalade
Directions
Sprinkle tenderloin with salt, pepper, and garlic powder to taste.
Place the tenderloin in a shallow roasting pan and insert a meat
thermometer in the thickest part of the meat. Roast in a preheated
350 degree F. oven for about 30 minutes.
Now baste with Orange Lemon Glaze every 15 minutes until thermometer
registers 170 degrees F. and roast is nicely glazed, about 1/2 hour
longer. Yield: 1 1/4 c.
GLAZE:
Stir together all the ingredients and cook until heated through. You
may have to thin the glaze with a little orange juice.

The History of Recipes
We can track the history of `recipes` back into antiquity, in fact as far back into recorded history as the early Egyptians, and possibly even further than that. Having said that, sadly, these early records were just basic pictorial instructions for meal preparation.
Later on, there are a couple of books dating from the 14th Century : a cookery book published under the title `Forme of Cury`, and another named `Curye on Inglish`. Perhaps surprisingly, these books have no connection with the indian food that is familiar to us all today, but instead recipes for the types of food eaten by the rich people of those days. Later on in the 1400s, the Crusaders brought back many new foods, spices and herbs from the East, such as coriander, parsley, basil and rosemary. These new foods and spices created an explosion in recipe manuscripts, most of which are kept safe in private libraries. The introduction of the TV brought us celebrity TV chefs and the accompanying recipe books. Which pretty much brings us to the present day and the internet revolution, allowing us all to search through thousands of recipes like those on this site. |
