Ingredients
2 lb pork shoulder, boneless, *
1/4 cup unbleached flour
1/2 cup vegetable oil
1/2 cup onion, chopped, 1 medium
2 bacon, slices, cut up
1/2 cup water
2 tbsp orange juice
2 tbsp lime juice
2 tbsp chicken bouillon, (dry)
2 tbsp cumin seed
1 tsp oregano leaves, dried
1/2 tsp salt
1/4 tsp pepper
4 cup tomatoes, chopped, 4 medium
2 cup potatoes, diced **
1/2 cup dairy sour cream
Directions
* Pork shoulder should be cut up into 1-inch cubes. ** Potatoes
can be pared or unpared. Coat pork with the flour. Heat oil in
10-inch skillet until hot. Cook and stir pork in oil over medium
heat until brown. Remove pork with slotted spoon and drain. Cook and
stir onion and bacon in the same skillet until bacon is crisp. Stir
in the pork and the remaining ingredients except the sour cream.
Heat to boiling, then reduce heat. Cover and simmer until pork is
done, about 45 minutes. Stir in sour cream and heat until hot. Serve.

The History of Recipes
Academics have traced the existance of recipes far back into antiquity, certainly as far back as ancient Egypt, and maybe even further. Interesting though that is, these, ancient records were just primitive pictorial recipes for preparing meals.
Progressing into The time of the romans around 25BC a roman called Apicius assembled a collection of scripts describing recipes cooked by wealthy roman citizens. In his scrolls, Apicius recounts how the roman meals were split into starters, entrees and desserts, something we still use today. This early Roman chef describes how the ancient cooks were skilled in the use of many spices, including a few that are still present in modern kitchens for example thyme, fennel and dill. Later, in the 15th century, knights returning from the crusades brought back many foods and herbs from the holy land, including coriander, basil and rosemary. These new foods and spices was responsible for an outbreak in recipe books, most of which are now in private collections. Like it or not, the introduction of TV brings us cooking programs and the demand for the accompanying recipe books. Which pretty much brings us to the present day and the internet revolution, allowing us all to access thousands of recipes like the ones you can find on this web site. |
