2 1/2 lb Porterhouse steak
: Sauce:
6 TB hoisin sauce
2 TB rice wine vinegar
2 TB soy sauce
2 TB unsalted butter
1/2 md red onion, -- finely diced
1 garlic clove, -- minced
6 plum tomatoes, -- coarsely
: diced
1/4 c ketchup
2 TB Dijon mustard
2 TB dark brown sugar
1 TB honey
1 ts cayenne
1 TB Ancho chile powder
1 ts Pasilla chile powder
1 TB Worcestershire
: Salt and freshly ground
: black pepper to taste
Season the steak with salt and pepper. Combine all sauce ingredients.
Grill the porterhouse for 5 minutes on each side while basting with
the sauce. Serve with grilled scallions and cast iron potato salad.

The History of Recipes
We are able to follow the history of meal recipes way back into antiquity, in fact as far back as the ancient Egyptians, and maybe further still. Interesting though that is, sadly, these ancient cook books were just simple pictorial instructions for meal preparation.
The truth of the matter is, the most ancient recipe in existence, according to experts is a collection of ancient tablets in ancient Sumerian which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel `wonderful`. As we move on, there were some interesting books which date from the 14th Century ; a recipe book entitled `Forme of Cury`, and another called `Curye on Inglish`. The titles are somewhat misleading tho`, these two books have no connection with the indian food that we all know today, but rather accounts of the types of food cooked for the upper classes. During the following few hundred years, the rich and powerful families of Wesstern Europe strove to offer the most exotic banquets, and as a consequence, the best cooks and their recipe collections became highly prized. However, it was during the 19th century that haute cuisine and recipe books became really popular. Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, spent years to collecting, trying out, and recording recipes for their fellow cooks to enjoy. The arrival of television brings us TV chefs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, allowing everyone to access massive numbers of recipes such as those found on sites such as this. |
