Ingredients
3 onions, sliced
1/2 tsp garlic, minced
2 tbsp margarine
16 oz white beans, drained
2 qt water
2 bay leaves
16 oz chicken stock
16 oz stewed tomatoes
1 1/2 tsp thyme
1 lb white fish
1/4 cup lemon juice
1/2 cup water
Directions
In a large soup pot, cook onions and garlic in margarine until onions
are transparent, about 5 minutes. Add beans, 2 quarts water, bay
leaves, chicken stock, tomatoes and thyme. Bring to a boil; reduce
heat and simmer 30 minutes.
In a seperate skillet, simmer fish in lemon juice and 1/2 cup water
until fish flakes easily with a fork, 5-10 minutes.
Drain lemon water; add fish to stew and heat thoroughly before
serving.

The History of Recipes
We are able to track the history of written recipes far back into the distant past, in truth as far into history as the ancient Egyptians, and quite possibly further than that. Interesting though that maybe, sadly, these old records were just simple hieroglyphic instructions for food preparation.
As we move into The time of the romans around 25BC a roman called Apicius created a collection of scripts which described recipes enjoyed by his fellow Romans. In his works, Apicius recounts how the meals were separated into appetizers, main meal and afters, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also tells us how the ancient chefs were skilled in the use of a wide range of aromatic flavours, including some that we all recognise like basil, mint and dill. Later, in the fifteenth century, people returning from the crusades brought us many new spices and herbs from the holy land, including coriander, parsley, and basil. These new spices and herbs created an explosion in manuscripts on cookery, the majority of which still exist in private libraries. The revolution that is television gave us celebrity chefs and the accompanying recipe books. Which pretty much brings us to the present day and the invention of computers and the internet, permitting us all to access massive numbers of recipes just like those on sites such as the one you are reading now. |
