The History of Recipes
We can trace the history of written recipes back into antiquity, in fact as far back into history as the early Egyptians, and quite possibly further than that. Interesting though that maybe, mostly, these ancient cookbooks were just primitive hieroglyphic recipes for preparing food.
In fact, the most ancient recipe discovered, according to experts in ancient history is a collection of clay tablets in ancient Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `blissful`. Later on, in Roman times around 25BC a man called Apicius compiled a collection of scripts showing how to cook the recipes enjoyed by wealthy Romans. He recounts how the meals were split into appetizers, main meal and dessert, a very modern way of dining. Aspicius also describes how the chefs of Roman times used many spices, including some that we all recognise like bay, fennel and parsley. Later on in the 1400s, the Crusaders brought back a variety of spices and herbs from the holy land, including coriander, parsley, and rosemary. The introduction of these new herbs and spices created an explosion in publications on food, the majority of which are now in private libraries. For the next few years, the wealthy families of the West strove to serve the most exotic banquets, and consequentially the best cooks and their recipes increased in prestige. Even so, it was during the 19th century that fine cookery and cookery books rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, devoted much of their lives to collecting, testing, and writing down recipes of the day. Like it or not, the introduction of TV brings us celebrity chefs and the accompanying recipe books. And that neatly brings us to the present day and the invention of computers and the internet, allowing everyone to access massive numbers of recipes like the ones you can find on this recipe site. |
