Ingredients
1 medium cucumber
4 medium potatoes peeled, and diced
1 tsp salt
2 cup cold water
1/4 tsp ground white pepper
1 cup heavy cream
1/2 cup milk
1 green onion, grated
1 tsp dried dill weed or
1 tbsp chopped fresh dill
Directions
Peel the cucumber and slice it lengthwise. Scoop out seeds with a
spoon and discard. Dice cucumber. In a heavy 2 1/2 quart saucepan
boil potatoes in salted water until the potatoes are very soft. Pour
potatoes and cooking liquid into a sieve or food mill or ricer set
over a large bowl. Force potatoes through. Return to saucepan. Stir
in pepper, cream, milk, grated onion and the cucumber. Simmer gently
for 5 minutes or until the cucumber is tender. Add dill and season to

The History of Recipes
It is quite possible to trace the history of recipes far back into antiquity, certainly as far as the early Egyptians, and possibly even further than that. In practice though, in the main part, these old cookbooks were just basic pictorial instructions for preparing food.
Interestingly, the oldest recipe discovered, according to food historians is a collection of clay tablets in the Sumerian language which show the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made anyone who tried it feel exhilarated and blissful. Closer to modern times, we find a couple of cookery books dating from the 14th Century ; a book entitled `Forme of Cury`, and another named `Curye on Inglish`. The titles are a little misleading though, these books have no connection with the spicy food that is popular today, but instead recipes for the types of food prepared by the cooks of the wealthy. During the succeeding few centuries, the powerful and wealthy houses competed to lay on the most exotic banquets, and consequentially cooks and their recipe collections could command a high salary. Notwithstanding that, it wasn`t until the 19th century that fine cooking and recipe collections rose to prominence. Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the US, devoted much of their lives to collecting, testing, and writing down recipes for their fellow cooks to enjoy. Like it or not, the introduction of television gave us TV cooks and the accompanying recipe books. Which pretty much brings us up to date and the invention of computers and the internet, allowing us all to access massive numbers of recipes such as those found on this recipe site. |
