Ingredients
8 oz left-over mashed potato
3 oz self-raising flour
2 tsp milk
1 salt and pepper
1 butter
Directions
Knead the flour into the potatoes and milk in a bowl, using as much
flour as can be worked into the potato to enable the mixture to be
rolled out on a floured surface. Cut into circles with a scone
cutter. Lightly grease a griddle or thick frying pan (a wipe with a
butter paper works well). Cook for 3-4 minutes on each side and eat
hot with butter.

We can follow the history of `recipes` back into ancient history, in fact as far back into history as pharonic Egypt, and possibly even further. Interesting though that is, mostly, these old cookbooks were just simple pictorial, hieroglyphic or cunieform instructions for food preparation.
Progressing into The time of the roman empire 25BC a man called Apicius created some documents showing how to cook the recipes enjoyed by wealthy roman citizens. In his scrolls, Apicius recounts how the meals of wealthy Romans were split into starters, entrees and dessert, something that is very familiar to us today. This early Roman chef describes how the ancient Romans made use of many aromatic flavors, including a few that will be familiar to modern chefs for example thyme, rue and parsley. Later on in the 1400s, knights returning from the crusades brought back a variety of foods and spices from middle-east cuisine, including spices such as coriander, parsley, basil and rosemary. These new foods and tastes was responsible for a surge in recipe publications, some of which are now in private cookery archives. By the time we get to the 20th century, cooking publications were greatly in demand as a result of higher levels of literacy, more spare time and being a little richer. |
