Ingredients
2 cup cold mashed potatoes
1 egg, beaten
1 cup cheddar cheese, grated
1 salt to taste
3/4 tsp ac'cent
1/2 cup fine bread crumbs
1/2 cup milk
Directions
Break up potatoes. Beat egg in blender until frothy. Add potato pieces
gradually, beating at medium speed until blended.
Stir in cheese, salt, and Ac'cent. Shape as desired. Dip into crumbs,
them milk, and again into crumbs.
Fry in shallow hot fat until golden brown on all sides.

The History of Recipes
We can trace the history of `recipes` way back into ancient history, certainly as far back into recorded history as early Egypt, and quite possibly further than that. However, mostly, these early recipes were just primitive pictorial, hieroglyphic or cunieform instructions for food preparation.
Progressing into Roman times around 25BC a man called Apicius created a collection of scripts detailing recipes prepared by the Romans. In his works, Apicius recounts how the meals of wealthy Romans were divided into appetizers, entrees and afters, something that is very familiar to us today. This early Roman chef informs us how the ancient chefs used a good variety of herbs and spices, including some that we all recognise like thyme, rue and asafoetida. Later, in the 15th century, the Crusaders brought back a variety of foods, spices and herbs from Arab countries, including spices such as coriander, parsley, and basil. These new herbs and spices prompted an increase in recipe publications, most of which still exist in private cookery archives. Like it or not, the introduction of TV brought us TV cooks and the spin-off recipe books. And that pretty much brings us to the present day and the invention of computers and the internet, permitting us all to access thousands of recipes like those on this site. |
