Potato Hash Recipe


Ingredients

450 g potatoes, cooked
50 g butter or margarine
100 ml milk
1 salt and pepper
1 oil for frying


Directions

Serves 2-3

You can use leftover baked potatoes for this dish if you have them
around. The simple device of browning a cake of mashed potatoes until
it is golden on both sides is one of the most delicious ways of
cooking potatoes. Warming, satisfying food.

Mash the potatoes thoroughly with the butter or margarine, and beat
to a smooth pur,e with the milk. Season well with salt and pepper.
Put a little oil into a heavy bottomed pan and press the mixture down
into it. Fry until the bottom is well browned, over a very low heat -
about 20 minutes. Turn over and brown the second side for a further
20 minutes or so. Turn out on to a warm serving-dish.

The History of Recipes

Transcribed cooking instructions as an idea can be found way back into history, in truth as far into history as the ancient Egyptians, and maybe even further. In practice though, sadly, these old cookbooks were just primitive pictorial, hieroglyphic or cunieform instructions for preparing food.

Much later, in Roman times a roman called Apicius compiled a collection of documents which described recipes enjoyed by his fellow Romans. In his publication, he tells us how the meals were divided into hors d`oeuvre, main course and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. Aspicius also recounts how the ancient chefs used many different spices, including a few you will know like thyme, fennel and dill.

Later on, in the 15th century, knights returning from the crusades brought back many new spices and herbs from the holy land, including spices such as coriander, parsley, basil and rosemary. The introduction of these new tastes prompted a torrent in recipe manuscripts, the majority of which still exist in academic collections.

The TV revolution brings us celebrity chefs and the recipe books that accompanied them.

Which pretty much brings us to the present day and the internet revolution, permitting us all to access thousands of recipes like those on this recipe site.
