The History of Recipes
It is quite feasible to follow the history of recipes back into distant history, at least as far as the Egyptians, and possibly even further. In practice though, generally, these old recipes were just primitive pictorial, hieroglyphic or cunieform instructions for food preparation.
Interestingly, the oldest recipe found, according to academics are a few tablets in ancient Sumerian which recount the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making those who drank it feel blissful. Progressing into The time of the romans around 25BC a Roman scholar, called Apicius, assembled some scrolls describing recipes enjoyed by the Romans. In his scrolls, Apicius recounts how the meals were separated into appetizers, entrees and afters, a very modern way of dining. He also informs us how the ancient chefs were skilled in the use of a good variety of aromatic flavours, including a few that will be familiar to modern chefs such as thyme, fennel and asafoetida. Later, in the 15th century, knights returning from the crusades brought us many foods, spices and herbs from the East, including spices such as coriander, parsley, and basil. These new culinary innovations created a surge in manuscripts on cooking, the majority of which are kept safe in private cookery archives. During the next few hundred years, the wealthy families of Europe competed with each other to serve the best banquets, and as a result chefs and their recipes were at a premium. Notwithstanding that, it was during the 1800s that cooking and cookery books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to collecting, trying out, and publishing popular recipes of the day. Like it or not, the introduction of TV brought us cooking programs and the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, permitting us all to access thousands of recipes such as those found on our site. |
