The History of Recipes
It is possible to track the history of meal recipes far back into ancient history, certainly as far back as the Egyptians, and maybe further still. Interesting though that is, these, ancient cook books were just very basic hieroglyphic or cunieform recipes for preparing food.
In fact, the oldest recipe found, according to experts in ancient history is a series of clay tablets in Sumerian which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who drank it feel wonderful. Later on, in The time of the romans around 25BC a roman called Apicius created a collection of scripts describing recipes cooked by wealthy Romans. In his works, he describes how the roman meals were separated into starters, entrees and dessert, a very modern way of dining. This early Roman chef describes how the Romans were skilled in the use of a good variety of aromatic flavours, including a few that will be familiar to modern cooks like thyme, rue and parsley. For the centuries that followed, the powerful and rich strove to serve up the most extravagent meals, and consequentially chefs and their recipes increased in prestige. However, it wasn`t until the 1800s the formal cooking and cookery books became popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the US, dedicated the best years of their lives to collating, trying out, and publishing recipes of the day. By the advent of the twentieth century, cookbooks are greatly in demand as a result of better eduction, increased leisure time and a general increase in wealth. |
