Potato Sourdough Starter Recipe


Ingredients

1 package dry yeast warm water
2 tbsp sugar
4 cup flour
1 potato, raw quartered


Directions

Here is a recipe from Texas Highways Cookbook.

Dissolve yeast in warm water; and then mix all ingredients in a
1-gallon crock. (Do not use metal container) Cover with a
close-fitting lid and let the starter rise until light (12 hours in
warm weather, longer in cool weather). Do not let the starter get
cold, ever. After using part of the starter, add 1 cup warm water, 2
teaspoons sugar, and enough flour to mix to the starter's original
consistency. Add more potato occasionally as food for the yeast, but
don't add more yeast. Use daily for best results. Starter improves
with age. I am sure you will get some posts for flake starters. I do
not have one.

The introduction of these new culinary ideas caused an explosion in recipe books, many of which are kept safe in private collections.

During the next few centuries, the rich and powerful families of Europe strove to serve the most extravagent banquests, and as a result the best chefs and their recipe collections increased in prestige. However, it wasn`t until the 19th century that cookery and recipe collections reached a high level of popularity. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, dedicated the best years of their lives to assembling, trying out, and recording recipes of the day.

The revolution that is television brings us TV chefs and the demand for the spin-off recipe books.

Which brings us neatly up to date and the invention of computers and the internet, permitting us all to search through massive numbers of recipes just like those on sites such as this.
