Ingredients
1 potatoes, cooked, peeled,
1 and boiled, in 1 1/2 inch
1 cubes
1 green onions, finely
1 chopped
1 tart green apples, less than
1 the potatoes, peeled and
1 diced smaller than the
1 potatoes
1 salt
1 black pepper
1 lots of fresh, chopped mint
Directions
Heat some oil in a pan. Cook the onions and potatoes until soft and
crusty, respectively. Add the apples and mint and cook for 6-8
minutes, stirring often.

The History of Recipes
It is quite feasible to follow the history of transcribed cooking instructions far back into antiquity, in fact as far into history as the ancient Egyptians, and maybe further still. Interesting though that maybe, mostly, these old cook books were just primitive hieroglyphic or cunieform instructions for preparing food.
In fact, the most ancient recipe found, according to Professor Solomon Katz, are some stone tablets in the Sumerian language which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making people feel `wonderful`. Later on, in The time of the romans around 25BC a Roman scholar, called Apicius, assembled some scrolls showing how to cook the recipes cooked by the Romans. In his works, he recounts how the meals of wealthy Romans were split into hors d`oeuvres, entrees and desserts, something we still use today. This early Roman chef describes how the Roman cooks made use of many herbs and spices, including a few that will be familiar to modern cooks such as bay, mint and dill. Later, there are some interesting books which were published in the fourteenth century : one book titled `Forme of Cury`, and another, similary named `Curye on Inglish`. Perhaps surprisingly, these books have no connection with the indian curry that is familiar to us all today, but rather descriptions of the types of meals on the menus of the wealthy. Later on in the 1400s, knights returning from the crusades brought us a variety of foods and herbs from the East, including basil and rosemary. The introduction of these new foods and spices caused an outbreak in books on cooking, most of which are now in academic collections. By the time we get to the 20th century, recipe publications are greatly in demand mostly as a result of increased literacy, people having increased free time and being a little richer. The arrival of television brought us TV chefs and the demand for the accompanying recipe books. Which brings us neatly up to date and the internet revolution, permitting us all to search through massive numbers of recipes like the ones you can find on our web site. |
