The History of Recipes
It is quite feasible to follow the history of transcribed cooking instructions way back into antiquity, in fact as far as the Egyptians, and quite possibly further than that. Having said that, in the main part, these early recipes were just primitive pictorial, hieroglyphic or cunieform recipes for preparing food.
In fact, the most ancient recipe discovered so far, according to academics are a few ancient tablets in the Sumerian language which show the preparation of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made drinkers feel `wonderful`. Later on, in The time of the roman empire 25BC a roman called Apicius created a collection of scripts which described recipes enjoyed by the Romans. In his scrolls, he describes how the meals of wealthy Romans were split into hors d`oeuvres, main course and dessert, a style of dining still practiced today. He also describes how the cooks of Roman times made use of many spices and herbs, including many that are still in use today such as bay, rue and asafoetida. Later, in the fifteenth century, people returning from the crusades brought us many new foods, spices and herbs from middle-east cuisine, including spices such as coriander, parsley, basil and rosemary. These new herbs and spices caused an increase in recipe publications, many of which are now in private libraries. For the decades that followed, the upper classes tried to serve up the best banquets, and because of this chefs and their collection of recipes were much in demand. Nevertheless, it wasn`t until the nineteenth century that haute cuisine and recipe collections rose to prominence. The Famous Mrs Isabella Beeton in the UK, and Fannie Farmer in the US, dedicated the best years of their lives to collating, testing, and recording recipes for their fellow cooks to enjoy. The arrival of television gave us celebrity chefs and the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, allowing everybody to search through massive numbers of recipes like the ones you can find on this site. |
