The History of Recipes
We are able to track the history of written recipes way back into the distant past, certainly as far back as the early Egyptians, and possibly even further. Having said that, generally, these old cook books were just very simple hieroglyphic recipes for preparing meals.
The truth of the matter is, the oldest recipe discovered, according to food historians are a few tablets in Sumerian which describe the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. As we move into The time of the romans around 25BC a man called Apicius assembled a collection of scripts describing recipes cooked by wealthy roman citizens. In his works, he tells us how the roman meals were separated into starters, entrees and desserts, something we still use today. Aspicius also tells us how the ancient Romans made use of many different herbs and spices, including some that we all recognise such as bay, mint and dill. Later, in the fifteenth century, the Crusaders brought back many foods, spices and herbs from the holy land, such as coriander, basil and rosemary. These new foods and spices was responsible for a surge in books on cooking, most of which are kept safe in academic collections. During the following few hundred years, the powerful families of the West competed with each other to lay on the most exotic banquets, and consequentially cooks and their recipes could command a high salary. Nevertheless, it was during the 1800s that fine cooking and recipe books became popular. Mrs Beeton in the UK, and the equally well-known Fannie Farmer in the USA, dedicated years of their lives to collating, verifying, and writing down recipes for their fellow cooks to enjoy. By the advent of the 20th century, recipe books are in high demand, due to better eduction, more free time and having more money to spend. The revolution that is television brought us cooking programs and the accompanying recipe books. Which brings us neatly to the present day and the invention of computers and the internet, permitting everyone to search through thousands of recipes like those on our web site. |
