Ingredients
1 pastry for unbaked one-crust pie
FILLING
1/2 cup sugar
1 1/2 tsp pumpkin pie spice
1/4 tsp salt
16 oz can (2 cups) pumpkin
12 oz can (1 1/2 cups) evaporated milk
2 eggs, slightly beaten
PRALINE LAYER
1/4 cup firmly packed brown sugar
2 tbsp all-purpose flour
1/4 cup margarine or butter
1/2 cup chopped pecans
TOPPING
3 oz pkg cream cheese, softened
2 tsp milk
1 tsp grated orange peel
8 oz 3 1/2 cups frozen whipped topping,
Directions
Prepare pastry for unbaked one-crust pie using 9-inch pie pan. Heat
oven to 425 degrees F. In large bowl, combine all filling
ingredients; beat until well blended. Pour into pastry-lined pan.
Bake at 425 degrees for 15 minutes.
Meanwhile, in small bowl combine brown sugar and flour. Using pastry
blender or fork, cut in margarine until mixture resembles coarse
crumbs. Stir in pecans. Sprinkle pecan mixture over pumpkin filling.
Reduce oven temperature to 350 degrees; bake an additional 30 to 35
minutes or until knife inserted near center comes out clean. Cool
completely.
In small bowl, combine cream cheese, milk and orange peel; mix until
smooth. Gently fold whipped topping into cream cheese mixture. Spoon
over cooled pie. Refrigerate until serving time. Store in

The History of Recipes
Historians have tracked the existence of recipes far back into distant history, at least as far back into recorded history as the Egypt of the Pharoahs, and possibly even further than that. Having said that, generally, these ancient cookbooks were just primitive pictorial, hieroglyphic or cunieform recipes for preparing meals.
As our culinary historical trip moves to more modern times we find a couple of interesting books published in the 14th Century ; a recipe book entitled `Forme of Cury`, and another named `Curye on Inglish`. Perhaps surprisingly, they are unconnected to the spicy food that we all know today, but instead recipes for the types of food prepared by the cooks of the rich and powerful of those days. By the arrival of the twentieth century, cookbooks are in great demand, as a result of higher levels of literacy, people having more free time and disposable income. |
