The History of Recipes
We can track the history of `recipes` back into the distant past, in fact as far as the Egypt of the Pharoahs, and maybe further still. However, these, ancient cook books were just very basic pictorial instructions for preparing food.
Later on, in Roman times around 25BC a man called Apicius assembled a number of scripts showing how to cook the recipes prepared by wealthy roman citizens. In his works, Apicius tells us how the meals were separated into hors d`oeuvres, entrees and afters, a style of dining still practiced today. He also tells us how the cooks of his times made use of many different spices, including a few that will be familiar to modern cooks like basil, mint and parsley. For the next few years, the powerful families of Wesstern Europe strove to lay on the most extravagent banquests, and as a result the best cooks and their recipes were much in demand. Nevertheless, it wasn`t until the 1800s that formal cookery and recipe collections rose to prominence. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Farmer in the US, dedicated years of their lives to assembling, testing, and publishing recipes that were common in the better off homes of the day. The arrival of television gave us TV chefs and the spin-off recipe books. And that neatly brings us to the present day and the internet revolution, permitting everyone to access massive numbers of recipes like those on this web site. |
