The History of Recipes
Written recipes as an idea can be traced back into the distant past, certainly as far back as the Egyptians, and maybe further still. Having said that, mostly, these old cook books were just very basic pictorial, hieroglyphic or cunieform instructions for food preparation.
In an interesting twist, the oldest recipe discovered so far, according to academics is a collection of clay tablets in the Sumerian language describing the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made people feel exhilarated and blissful. Continuing our culinary historical journey, there are two interesting books from the 14th Century ; a cookery book entitled `Forme of Cury`, and another, similary named `Curye on Inglish`. Don`t be fooled by the titles though, these have no connection with the spicy food that is served today, but instead descriptions of the types of meals prepared by the cooks of the upper classes of those days. Later on, in the 15th century, the Crusaders brought back many foods, spices and herbs from middle-east cuisine, including parsley and basil. These new culinary innovations prompted an explosion in manuscripts on cookery, the majority of which are now in academic collections. Over the succeeding few centuries, the powerful families of Europe competed with each other to serve the best banquets, and because of this the best cooks and their recipe collections were at a premium. Notwithstanding that, it wasn`t until the 19th century that cooking and cookery books became popular. The Famous Mrs Isabella Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, spent years to collating, trying out, and recording popular recipes of the day. When we get to the 20th century, recipe publications were in high demand, due to higher levels of literacy, people having more spare time and having more disposable income. The TV revolution brought us cooking programs and the spin-off recipe books. And that pretty much brings us to the present day and the internet revolution, permitting us all to access massive numbers of recipes like those on sites such as this. |
