The History of Recipes
We are able to read the history of written recipes back into ancient history, at least as far back into recorded history as the early Egyptians, and possibly even further. However, generally, these ancient cook books were just very simple hieroglyphic or cunieform recipes for meal preparation.
In fact, the oldest recipe found, according to Professor Solomon Katz, are a few tablets in Sumerian which recount the baking of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel wonderful and blissful. Later on, we find two interesting books published in the fourteenth century - one book published under the title `Forme of Cury`, and another, similary titled `Curye on Inglish`. Perhaps surprisingly, these are nothing to do with the indian curry that appears on menues today, but rather descriptions of the types of meals prepared by the chefs of the nobility of that time. Later on in the 1400s, people returning from the crusades brought back many foods and spices from the Middle-East, including spices like coriander, basil and rosemary. The introduction of these new foods and spices prompted a surge in books on cooking, some of which still exist in academic collections. For the next few years, the powerful and rich houses competed with each other to serve the most extravagent banquests, and as a result the best chefs and their recipes were greatly in demand. Nevertheless, it wasn`t until the 1800s that fine cooking and recipe publications really came of age. The Famous Mrs Beeton in the UK, and the equally well-known Fannie Merritt Farmer in the US, dedicated the best years of their lives to collating, testing, and writing down recipes common in their social group. The introduction of the TV gave us cooking programs and the demand for the spin-off recipe books. And that brings us to the present day and the invention of the internet, permitting everybody to search through massive numbers of recipes like the ones you can find on this site. |
