The History of Recipes
It is quite possible to prove the history of transcribed cooking instructions far back into history, in fact as far back into recorded history as the ancient Egyptians, and maybe even further. Interesting though that maybe, these, early recipes were just very basic pictorial recipes for meal preparation.
Interestingly, the most ancient recipe discovered, according to Professor Solomon Katz, are some ancient tablets in Sumerian which show the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as having made those who drank it feel `blissful`. Closer to modern times, we find a couple of books dating from the 1300s - one book titled `Forme of Cury`, and another titled `Curye on Inglish`. Although the titles sound familiar, these two books are nothing to do with the indian food that is familiar to us all today, but instead accounts of the types of meals on the menues of the rich and wealthy people of that period. Later, in the 15th century, people returning from the crusades brought back many new spices and herbs from the holy land, including spices such as coriander, parsley, and basil. The introduction of these new herbs and spices created a surge in recipe publications, most of which are now in private cookery archives. During the next few hundred years, the powerful and rich houses strove to serve the most exotic banquets, and consequentially chefs and their recipes were greatly in demand. Even so, it was during the 1800s that haute cuisine and recipe books rose to prominence. The Famous Mrs Beeton in the UK, and Fannie Farmer in the US, dedicated the best years of their lives to collecting, trying out, and recording recipes that were common in the better off homes of the day. Like it or not, the introduction of TV gave us celebrity TV chefs and the accompanying recipe books. And that brings us to the present day and the invention of the internet, allowing everybody to search through massive numbers of recipes such as those found on our site. |
