The History of Recipes
We can follow the history of written recipes far back into distant history, at least as far back as the ancient Egyptians, and maybe even further. Interesting though that is, these, early recipes were just simple hieroglyphic instructions for preparing meals.
In fact, the oldest recipe in existence, according to Professor Solomon Katz, is a series of clay tablets in Sumerian which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel `blissful`. Later, we find two recipe books dating from the 1300s - a recipe book called `Forme of Cury`, and another, similary named `Curye on Inglish`. The titles are somewhat misleading tho`, these are nothing to do with the indian food that is popular today, but instead descriptions of the types of meals eaten by the upper classes. For the decades that followed, the powerful and wealthy competed to offer the most exotic banquets, and as a consequence, chefs and their recipes were highly sought after. However, it wasn`t until the 1800s that haute cuisine and recipe collections became popular. The Famous Mrs Beeton in the UK, and the equally famous Fannie Merritt Farmer in the USA, devoted much of their lives to collating, testing, and writing down recipes for their fellow cooks to enjoy. By the time we get to the 20th century, cookbooks are in great demand, mostly due to more people being able to read, leisure time and being a little richer. |
