Ingredients
1 lb green cabbage
2 tbsp butter
3 tbsp chopped onion
1/4 cup chopped raw potato
1/2 tsp ground mace
2 tbsp all-purpose flour
2 1/2 cup milk
2 1/2 cup chicken broth
1/4 cup heavy cream, whipped
2 tbsp chopped parsley
2 tbsp grated parmasean cheese
Directions
Quarter the cabbage; cut away the hard stalk. Cover wtih boiling
water and leave for 5 minutes. Drain, pat dry, and shred. Melt the
butter over low heat and simmer the chipped onion until tender, but
without browning. Add cabbage and potato and stir over low heat. Add
mace. Stir in the flour to coat all ingredients, but donot brown. Add
the liquids and bring to a boil, simmer for 20 minutes or until
vegetables are tender. Rub thru a sieve
add salt and pepper to taste. If soup is too thick, add a little
boiling milk. Serve with a spoonful of whipped cream on each serving
and sprinkle parsley and grated cheese on the the cream. Makes 7

The History of Recipes
Food historians have traced the existence of recipes back into antiquity, in truth as far back as the ancient Egyptians, and maybe further still. Having said that, generally, these old recipes were just very basic hieroglyphic or cunieform recipes for food preparation.

Perhaps surprisingly, these are nothing to do with the indian curry that is familiar to us all today, but instead recipes for the types of food cooked for the wealthy. By the arrival of the 20th century, cooking books were starting to become popular mostly due to better eduction, more leisure time and disposable income. |
