Ingredients
2 cup sugar, brown
1 cup oil
1 1/2 cup pumpkin, cooked, mashed
2 egg
3 cup flour
1 tsp salt
1 tsp baking powder
1 tsp vanilla
1 1/2 tbsp cinnamon
1/2 tbsp ginger
1/2 tbsp cloves, ground
FILLING
1 egg white, beaten
2 tbsp milk
1 tsp vanilla
1 cup sugar, confectioners
Directions
Cream the sugar and oil. Add the pumpkin and eggs. Add the flour,
salt, baking powder, soda, vanilla, and spices. Mix well. Drop by
heaping teaspoons onto a greased cookie sheet. Bake at 350 F. for 10
to 12 minutes. Make sandwiches from two cookies filled with the
filling.
FILLING:
Mix all ingredients; then add one more cup of confectioners' sugar and
three-quarters cup of shortening.
VARIATION:
Adding half a cup of ground black walnuts gives these cookies a
special delicious flavor.

The History of Recipes
Written recipes as a concept can be observed back into distant history, at least as far as the Egypt of the Pharoahs, and maybe further still. Having said that, mostly, these ancient records were just very basic pictorial recipes for preparing food.
Progressing into The time of the romans around 25BC a man called Apicius created a number of documents showing how to cook the recipes cooked by wealthy Romans. In his works, Apicius recounts how the meals of wealthy Romans were separated into appetizers, entrees and dessert, known in latin as `Gustatio, Primae Mensae and Secundae Mensae`. He also informs us how the ancient chefs made use of a good variety of aromatic flavours, including many that are still in use today for example thyme, mint and asafoetida. Later, in the 15th century, knights returning from the crusades brought us a variety of foods and spices from the holy land, including spices such as basil and rosemary. The introduction of these new culinary ideas created a surge in recipe publications, some of which are now in private libraries. Like it or not, the introduction of TV brings us TV chefs and the demand for the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, permitting us all to search through massive numbers of recipes such as those found on our site. |
