Ingredients
1 leaf lettuce
4 slice bacon, diced
1/4 cup water
1 salt and pepper
1/4 cup vinegar
1 tsp shallots or onions, chopped
3 tbsp sugar
Directions
Wash lettuce thoroughly, dry and cut coarsely. Add shallots or onions,
sugar, salt and pepper. Fry bacon until golden brown. Dice it and add
to the lettuce. Into 2 Tb hot bacon fat, add the vinegar and water
and bring to a boil. Pour over lettuce, mix and serve.

The History of Recipes
We can track the history of written recipes far back into history, in fact as far into history as the early Egyptians, and potentially, even further back. In practice though, mostly, these ancient records were just basic pictorial instructions for preparing meals.
In fact, the most ancient recipe found, according to food historians is a series of stone tablets in the Sumerian language which recount the making of bread which is then used to make a drink, quite possibly a form of beer as it is recorded as making anyone who tried it feel wonderful and blissful. Progressing into Roman times around 25BC a roman called Apicius wrote a number of documents showing how to cook the recipes enjoyed by his fellow Romans. He describes how the meals were divided into hors d`oeuvres, main course and desserts, a style of dining still practiced today. He also informs us how the ancient chefs were skilled in the use of a wide range of spices, including a few that will be familiar to modern chefs such as bay, fennel and parsley. Later on, we find some books dating from the fourteenth century - a book called `Forme of Cury`, and another named `Curye on Inglish`. The titles are a little misleading though, these books are not about the indian curry that is popular today, but rather recipes for the types of meals enjoyed by the rich and wealthy people of those days. Later on in the 1400s, people returning from the crusades brought back a variety of foods, spices and herbs from the East, including spices like coriander, parsley, and basil. The introduction of these new tastes caused an increase in recipe books, many of which still exist in private libraries. By the advent of the twentieth century, cook books were greatly in demand due to increased literacy, people having increased leisure time and having more money to spend. The introduction of the TV gave us TV chefs and the spin-off recipe books. And that neatly brings us to the present day and the invention of the internet, permitting us all to access massive numbers of recipes just like those on this web site. |
