Green Bean and Mozzarella Salad

Serves 4
Ready in 15 to 30 mins

Ingredients

  • 200g fresh peas, cooked
  • 200g fresh green beans, cooked
  • vegetarian mozzarella ball, torn
  • 4 cherry tomatoes, cut in half
  • 2 vine tomatoes, each cut into 6
  • 4 tbsp extra virgin olive oil
  • the zest and juice of 1 lemon
  • salt and black pepper
  • small handful of basil, torn
  • 2 barbecued flatbreads

How To Cook

  1. Place the cooked peas, beans, torn mozzarella and tomatoes in a medium-sized bowl.
  2. Mix together the oil, zest and juice in a small bowl and season.
  3. Pour over the salad and toss gently. Spoon onto a large salad dish, sprinkle with basil and serve with barbecued flatbreads.
