Tofu is often associated with Asian cuisines, but there are many recipes with tofu that don't fall under the umbrella of Oriental food. Made from soya beans and associated with numerous health benefits, it's a low-fat source of protein that can be used in many dishes to thicken or provide texture, and can be fried, baked and steamed, or even used raw.
Tofu Recipes
Each tofu recipe draws on the different properties of this ancient foodstuff. Uncooked, it can be blended into a cream, to be used in dressing, sauces and desserts. Fried or baked it becomes chewier and more satisfying, and can be used as a meat substitute. How To Cook Tofu
We're often asked how to cook tofu, and there definitely is a knack to using this ingredient properly. If you want tofu to take on a marinate, it needs to be pressed first. Drain away any liquid then place the soggy block on a few sheets of kitchen roll. Top with more kitchen paper and then with a weight – such as a heavy plate – and leave to drain. Even a brief pressing will improve results, but ideally leave for around 10 minutes. Then, make lots of holes in the block with a skewer, cut into your desired shape (cubes, steaks, fingers) before marinating. Pressed tofu can be thrown straight into stews and curries; alternatively fry or bake first for a firmer texture with more bite. Enjoy!
