Tomato and Smoked Paprika Roasted Aubergines

Ready in 30 to 60 mins

Ingredients

  • 2 aubergines, cut in half and cut with criss-cross
  • olive oil, for drizzling
  • 1 jar Belazu Tomato and Smoked Paprika Sauce
  • 100g vegetarian feta
  • 1 sprig of fresh chopped mint
  • cooked couscous, to serve

How To Cook

  1. Preheat the oven to 200C/400F/Gas 6. Place the aubergines in a baking dish and drizzle with olive oil. Roast for 30 minutes.
  2. Remove and spread with the jar of sauce and return to the oven for a further ten minutes. Crumble over the feta and chopped mint and serve with cooked couscous.
