Apple and Raisin Honey Squares

With a layer of sweet apples and raisins in between gorgeous golden honeyed oats, these squares are absolutely perfect with a cup of tea

Ingredients

  • 225g self-raising flour
  • 225g rolled oats
  • 225g Kerrygold Honey Spread
  • 225g sugar
  • 110g raisins
  • 2 tbsp golden syrup
  • 1 tsp bicarbonate of soda
  • 2 dessert apples, peeled, cored and finely chopped

How To Cook

  1. Preheat the oven to 180C/350F/Gas 4. In a bowl, mix together the flour, the oats and the bicarbonate of soda.
  2. Place a saucepan on a medium-low heat, add the honey spread, sugar and golden syrup and stir together for a few minutes until it has melted and dissolved.
  3. Remove the saucepan from the heat and stir into the flour and oat mixture. Press half the mixture into a greased and lined square tin.
  4. Mix together the apples and raisins then sprinkle over the mixture in the tin and spread the remaining oat mixture on top.
  5. Place in the oven and bake the biscuits for about 30 minutes until golden, then leave to cool for a few minutes before cutting into squares and placing on a wire rack to cool.
