party food!!!
going to a party this weeknd - need ideas! need to take a few veggie thinsg as only veggie going and dont want to spend all night eating same things!!! need to be easy tho pls.

Hi Kitty
How about taking a really hearty couscous salad (lots of roast vegetables, apricots and lots of flavour from herbs and spices) and/or some falafel? They work on their own or together. You can also make (or buy) some houmous or baba ganoush. Otherwise sandwiches are easy, and you could make some interesting fillings, like chunky guacamole and fried tofu, or goat's cheese and red pepper, so it's not the usual egg mayo offering...

Pasta salad is easy to make a big bowl of (everyone always seems to like the veggie stuff!!!)
Baked potatoes - cut in half then put back together, wrap in silverfoil, oven for 2 hours. Leave them in silverfoil and transport to venue - they will stay warm. We did a whole pack of potatoes for a small party and turned around and they were gone!!
Indian selection from any supermarket are a good cheat, can be eaten cold
Potato skins (although these need to be eaten warm really) - I can write down my recipe for this if you want
Sandwiches
veggie sausage rolls (I make my own but could buy and heat)
Tesco do a bag of frozen small cheese and tomato rolls

fanks guys!!! had a brill party on sun. did big bowls pasta salad and couscous salad, felafals, cheese & tom rolls and lots of dips. everyone really enjoyed it!!! juker - id love the potato skins recipe if u dont mind... got friends coming over this weeknd - sounds fab!!!!

This is what I do
didnt follow a recipe or anything just created them one day
Baking potatoes
Onion Marmalade
Mozzerella
Cut the baking potatoes in half length ways, put back together (using kitchen paper to wipe off any liquid) and wrap in kitchen foil
Put into oven on 240 for 1 hour and lower oven to 220
Take out of oven, separate, put back into oven open sides up - 20 minutes
They should be starting to brown on top when you take them out. Now scoop out the middle of the potato, leaving as much or little potato as you would like.
Fill the hole you have created with onion marmalade, top with grated cheese and put back into the oven for 10-15 minutes (until the cheese is done)
Tip: The potato is nice cold, mashed up and mixed with coleslaw

Loving Juker's recipe! Try bruschetta too. Just slice a French stick or ciabatta loaf, toast and rub with a garlic clove. You can top it with whatever you like but mashed up broad beans, goat's cheese, a little lemon zest, chopped dill and chilli is my favourite and transports well

You cam make Russian salad or fruit chat with soar soup.These both dishes are really tasty and delicious to eat.They have unique taste to eat ans it is also helpful for health.You can also make some potato snacks.
