Creamy Lemon and Herb Pasta Sauce

Serves 4
Ready in 15 to 30 mins

Ingredients

  • 25g butter
  • 2 garlic cloves, crushed
  • 350ml double cream
  • the zest and juice of 2 lemons
  • 4 tsp finely chopped mixed herbs (eg thyme, rosemary and sage)
  • 80g vegetarian Parmesan, finely grated, plus extra to serve
  • 200g cooked green beans

How To Cook

  1. Melt the butter in a small saucepan and gently fry the garlic, taking care not to burn it. Add the double cream, the zest and juice of 2 lemons and the mixed herbs.
  2. Add the Parmesan-style cheese and stir to mix. Once heated through, adjust the seasoning and serve with over pasta with a cooked green of your choice. (Here, we used green beans.) Finish with a little extra grated vegetarian Parmesan-style cheese.
