Roast Swede Wedges with Parmesan-style Cheese

Ready in 30 to 60 mins

Ingredients

  • 800g swede, peeled and cut into slim wedges
  • 1 tbsp oil
  • small bunch of thyme, leaves picked
  • 50g grated vegetarian Parmesan-style cheese
  • freshly ground black pepper

How To Cook

  1. Preheat the oven to 200C/400F/Gas 6. In a bowl, toss the swede in the oil, thyme and half the Parmesan-style cheese until well coated.
  2. Spread the wedges out in a roasting tin and cook in the oven for 35-40 minutes until the swede is cooked through and crisp on the edges.
  3. Once cooked, tip into a serving bowl and while still hot, sprinkle over the remaining cheese and a good grinding of black pepper.
