Mexican Tortilla Pizza

Pizzas needn't be tricky; simply use a tortilla for a quick and low-fat alternative to dough

  • 1 floured tortilla
  • 2 tbsp pizza sauce
  • 50g Total Greek Yoghurt Authentic
  • 25g Piquante peppers or sweet chilli peppers
  • 25g chargrilled artichoke hearts
  • handful of rocket
  • salt and pepper, to taste

    Preheat the oven to 200C/400F/Gas 6. Place the tortilla wrap on a baking sheet and spread the tomato sauce right up to the edge.

    Sprinkle on the rocket leaves and arrange the peppers and artichoke on top. Spoon on four or five dollops of yoghurt and bake in the oven until golden brown.
