Mushroom and Brie Crêpes

As you tuck into these delicious pancakes, the memories of French holidays will come flooding back!

  • 25g butter
  • 1 tbsp olive oil
  • 150g chestnut mushrooms, sliced
  • 100g button mushrooms, halved
  • 125g pack oyster mushrooms
  • 2 cloves garlic, chopped
  • 3 sprigs fresh thyme
  • 2 tbsp crème fraîche
  • 200g vegetarian Brie
  • 4 pack of crêpes
  • salt and pepper
  • 1

    Melt the butter and olive oil in a large frying pan. Add the sliced chestnut mushrooms and button mushrooms and fry over a high heat until nicely browned.

    Add the garlic cloves, oyster mushrooms and the leaves from the thyme and cook for two minutes. Add two tbsp crème fraîche and seasoning and heat until just melted.

    Dice the Brie, add to the mushrooms and then spoon into the warmed crêpes. Garnish with extra thyme and serve with a watercress salad.
